Government & Coffee part 2

The previous blog post referenced an impending FDACS inspection. We received one today. A picture is worth a thousand words, so here are three thousand words.

 

In a nutshell, Our coffee and tea has been taken hostage by the Florida Department of Agriculture and Consumer Services. We are not allowed to touch our property until the government says we can. What country is this? More to follow.

I wish I knew when I had the right answers. Is there a proper role for government? If so, what is it, and what grade would your local government deserve? This is relevant for The Grind because we should be receiving our yearly inspection from the Florida Department of Agriculture any day now. The Grind has taken a position the FDA has exceeded the proper role for government in their 2009 inspection. This may impact our 2010 inspection.


Espresso

The term “espresso” is derived from the Italian word for express since espresso is made for and served immediately to the customer.  A double espresso is a 47-62.5 mL (1.5-2 ounce) extract that is prepared from 14-17 grams of coffee through which purified water of 88-95°C has been forced at 9-10 atmospheres of pressure for a brew time of 22-28 seconds.  The espresso should drip out of the porta-filter like warm honey, have a deep reddish-brown color, and a crema that makes up 10-30% of the beverage. (Coffeeresearch.org)
